This traditional "Medicina" sauce made of onion and pancetta is from Michelin starred restaurant Amerigo 1934 in Bologna, Italy. Excellent with ravioli and fresh pasta. Ingredients are sourced from the Emilia Romagna region with the famous Medicina onions, grown in the province of Bologna.
