Also known as Orata (Italy), Daurade (France), and Dorada (Spain) due to the golden color of its scales.  This is a light and delicious, versatile, flakey white fish.

Made from sustainably farmed Dorade, this recipe is gently steamed, and hand-packed in cans with water, and salt.  This recipe reflects the tradition of restaurants along the Amalfi coast which serve the fillets simply with salads, sliced tomatoes, potatoes, and a generous drizzle of intense extra virgin olive oil, like De Carlo's Torre di Mossa, a maybe a little fresh lemon.


IASA (pronounced Yasa) was founded in 1969 by a family originally from Cetara, a small village on the Amalfi Coast, known for fishing and processing tuna, anchovies and typical anchovy casting.  Ittica Alimentare Salerno (IASA) combines tradition and attention to detail with innovative preservation techniques and high quality selection.
