San Giacomo's Raw Lambrusco Red Wine Vinegar is old-fashioned wine vinegar - “the way they used to make it” - strong and vigorous made from local organic grapes. This vinegar is naturally acidify; it takes 9 months to make.
Slowly acetified, using the “static-surface” method, in 220 or 350 liter oak barrels. Pure and fragrant, never diluted with water (no water added). High acidity, approximately 8.3%.
