Small, whole muscle shoulder steak, more marbled than Pluma steak.  Beautiful color and incredible taste.  Fantastic grilled simply with salt and pepper.

Meat is fresh, frozen at origin to guarantee quality.  These Iberico pigs are free range and raised without hormones or steroids.  Natural-vegetarian feeding, these 100% "Bellota" is based on acorns and wild grass during the Montanera or fattening season.  Black tag products are the highest quality of Iberico products.
