This turret-shaped goat’s cheese combines a light, fluffy texture with bright, citrusy flavors and a gentle acidity.  Average age 3-4 weeks.

This cheese intentionally has a thin mold rind.  Because of this, wild molds- spots of blue, green and grey molds, often develop on the surface during maturation.  They are perfectly safe to eat and do not negatively affect the flavor of the cheese.
