Single varietal, Coratina from Bitritto, Puglia where the age of the olive trees are centuries-old. Olives are harvested by-hand, and processed within 12 hours of harvesting.
Torre di Mossa is the De Carlo family’s "historical" farm, where this exceptional extra-virgin olive oil was created, completely reflecting they're idea of quality.
It has a medium-intense fruitiness and an intense green color. The scent opens wide and elegantly, with the aroma of olive and fresh cut grass, followed by notes of artichoke and green almond. This finishing oil starts off sweet, then bitter, stimulating the palate with a persistent sensation of vitality!
Pairs well with simple grilled bread but is also ideal for raw meat preparations, legume soups, wheat, carpaccio meat dishes, and zesty first courses.
