This pasta is toothsome and slightly sweet, and very satisifying. Mancini pasta is produced from durum wheat they grow! Semolina and water are the only ingredients.
They use circular bronze die plates and dry the pasta at temperatures lower than 130F, taking about 25 hours for short pasta and about 45 hours for long pasta.
Spaghetti has a diameter of 2,2 mm and a length of 260 mm (approx. 10.25"). Cooking time is between 9 and 11 minutes.
