The ProducerOpened in 1902, Yamaki Jozo produces soy sauce in Kamikawa, Saitama Prefecture.  Run by 5th generation Kitani-san and his siblings, Yamaki Jozo adheres to traditional methods and takes great care in making their products.

They use pristine ingredients including Japan-grown whole soybeans, wheat and water that comes from a natural spring at the top of a local mountain.  Over 20 years ago they built a pipe from the top of a local mountain to their factory in order to secure their supply of the clear, natural spring water.

These ingredients are used to produce the pride of the company - their 'soul' they say - the moromi (mash).  This moromi is aged for 2 years in traditional cedar barrels.  Their soy sauce is so highly regarded that it is presented annually to the Emperor of Japan.
