A full-flavored Siberian caviar with firm 2.5-2.9 mm pearls and a distinctly ocean-forward character. Notes of nuts, oyster, nori seaweed, and honey develop around gentle iodine salinity and a creamy middle, finishing long and clean.
The label malossol, a Russian term which translates “little salt,” indicates that the caviar has been preserved using the least amount of salt without masking its fresh flavors. Most caviar is preserved with borax, which alters the texture – evidenced by a popping sensation in the mouth. This fresh caviar does not pop; instead, it has a sensational creamy texture.
This truly sustainable caviar is harvested from Siberian sturgeon on a state-of-the-art aquafarm in Italy that follows the strictest of animal welfare and environmental protocols. The high quality of our caviar is evident in its color, flavor, and texture. The round, plump pearls have a lingering and nutty flavor reminiscent of hazelnuts or fresh walnuts. With ultra-silky mouthfeel and a color that ranges from clear grey to golden chestnut to deep brown, this buttery caviar is truly unforgettable.
