Basically, a half cut Rigatoni, or half sleeve.  Perfect for kids or for smaller pasta portions.  The pasta is toothsome and flavorful.  This is the best Italian pasta you will ever eat.  Mancini pasta is produced from durum wheat cultivated directly by the company, which is very uncommon.  Semolina and water are the only ingredients.

They use circular bronze die plates and dry the pasta at temperatures lower than 130F, taking about 25 hours for short pasta and about 45 hours for long pasta.

Mezze Machine has a diameter of 19.2 mm and a length of 20 mm (about .75").  Cooking time is between 9-11 minutes.

Ingredients:  durum semolina wheat, water

Weight:  500 g / 1.1 lb
