Linguine is the staple of any pasta pantry.  It's as versatile with red sauce, as it is with white, and especially delicious with clams.  The pasta is toothsome and flavorful.  This is the best Italian pasta you will ever eat.  Mancini pasta is produced from durum wheat cultivated directly by the company, which is very uncommon.  Semolina and water are the only ingredients. 

They use circular bronze die plates and dry the pasta at temperatures lower than 130F, taking about 25 hours for short pasta and about 45 hours for long pasta.

Linguine has a diameter of 4.4 mm, thickness of 1.5 mm and a length of 260 mm (about 10.25").  Cooking time is between 7 and 9 minutes.
