Believe it or not, but there is no butter produced in Teton Valley (Idaho or Wyoming)! The closest artisan Jersey milk butter is in Preston, about 3 hours away.
This small family farm makes dairy we all dream of, but rarely have access to. Though technically not marketed as grass fed, these beautiful and healthy Jersey cows are feed about 80% grass. Butterfat is approximately 82-84%. Because it is raw, it has a pasty texture.
NOTE: Because the butter is raw it will develop a cheesy smell over time as the natural bacteria culture it. This is especially true for this butter because of salt not being present to help with preservation. It still should be good but if you are not comfortable using it on breads and toasts then they definitely can still use it to cook/bake with.
ALL of our house made goodies are made with this butter because when we say local ingredients, we mean it. The first order I picked up personally. It was worth the trip, plus I got to meet the farmer and their 13 "staff".
We receive the butter fresh, then freeze it.
