Fleur de Sel is hand harvested salt that forms from the thin, delicate crust on the surface of seawater as it evaporates. Not processed. Salt is then hand raked, then sun dried and packed.
This salt is the most delicate in flavor and texture of all finishing salts. The name comes from the flower-like patterns of crystals in the salt crust.
Believe it or not, this is my everyday salt in garnishing all my meals. Why not, life is too short! The salt it not "salty" or tinny like processed salts, and it melts beautifully into meats. This is also my choice for garnishing chocolate truffles because the grain size is so delicate; unlike "flake" salt which can sometimes be to large and overpowering.
