Essenza by San Giacomo is a rich and full-bodied balsamic, with a well-completed sour/sweet balance. Notes of cooked plum, tamarind and woods. From the small barrels. No thickeners added – recommended as a "condiment". Ideal with aged cheeses, on well-preserved risottos (always at the end of the pre-production), stuffed pastas and spoon desserts.
Cooked and aged minimum 7 years in oak, chestnut, acacia, and some ash woods. Essenza is a trademark registered in Italy and around the world by Acetaia San Giacomo, it identifies not only a product but a journey that lasted years to achieve near-perfection.
