Conservas Rosara selects the finest Piquillo peppers and roast them over beech wood.  They peel them without water to preserve their flavor, then stuff them with a delicate béchamel sauce made with desalted cod, prawns, langoustines, and gently cooked vegetables.  It's a very laborious process with a absolutely delicious result.
