San Giuliano's extraordinary Sicilian blood oranges are sliced crosswise into 1/4-inch thick slices, blanched for a few minutes to remove their bitterness, then gently caramelized in simple syrup until shiny and tender. With the most delicate touch, the slices are stacked into a jar and covered with a dense reduction of orange juice, simple syrup, and a splash of organic brandy.
Top a perfectly roast duck or turkey with the orange slices a few minutes before removing from the oven. Use in decorating cheesecake, cupcakes, or a traditional Cassata Siciliana. Transform any cake into an upside-down cake: simply cover the bottom of the cakepan with orange slices and syrup then top with cake batter and bake. Flip after baking for a stunning presentation! Use the boozy syrup in mixed cocktails and finish with a whole orange slice.
