San Giuliano red grapefruit marmalade is a feast for both the palate and the eye. This rare variety is distinguished by its slightly bitter flavor, and when served with cheesecake, all its various shades of red are truly appreciated. This exquisite marmalade, with its clean, bright flavor, fresh citrus aroma and tiny bits of pulp, is one of San Giuliano's best. Swirl it into oatmeal and yogurt or whisk it into a salad dressing. Sweet and tangy, it complements soft, creamy cheeses like goat cheese or sheep's milk ricotta.
Red Grapefruit (Citrus x paradisi) is a subtropical hybrid citrus tree first bred in Barbados and introduced to Sicily in the 1920s. It was bred from the pomelo or shaddock (Citrus maxima) and the sweet orange (Citrus x sinensis) and is known for its highly acidic, tart flavor.
The Marchesi di San Giuliano estate, located in the foothills of Mount Etna between Catania and Siracusa, has been owned by the Castello di San Giuliano family for over 800 years. San Giuliano make marmalades and biscuits, using only fresh fruit from their own citrus orchards and selected organic ingredients.
The fruit is harvested by hand with production taking place during the winter months, when the fruit is mature and ready to be harvested. The fruit is hand-sliced and soaked in cold water overnight. Then it is slowly cooked down and only cane sugar is added. No thickeners or preservatives are ever used.
