Podere Francesco's compote is made with just one ingredient: fruit, with no added sugars or other additives. Piatti is in the Piedmonte region, well known for their peaches. To preserve the fruit's natural aromas and colors without altering them, it is vacuum-packed and cooked at a low temperature.
Thanks to the very high percentage of fruit used to make this compote (approximately 250 g of fruit per 100 g of compote), it is not necessary to add any gelling agent or pectin which would alter its flavour and properties.
