Limited edition "Signoria Gonzaga" aged Essenza in juniper and cherry barrels to make this unique product. It is produced in the ancient dominions of the Gonzagas', in Novellara (RE).
Essenza by San Giacomo is a rich and full-bodied Balsamic, with a well-completed agro-sweet balance. Notes of cooked plum, tamarind and woods. From the small barrels. No thickeners added – recommended as a "condiment". Ideal with aged cheeses, on well-preserved risottos (always at the end of the pre-production), stuffed pastas and spoon desserts. Cooked and aged minimum 8 years. Aged in oak, chestnut, acacia, as well as cherry and rare juniper.
