Bottarga is one of the world’s oldest seafood traditions—a delicacy enjoyed by coastal cultures for centuries.
At Cortez Conservas, they produce traditional bottarga from wild grey mullet harvested along Florida’s Gulf Coast. Using only salt, each roe is carefully selected, pressed, and cured to concentrate its flavor while preserving its natural character. Briny, buttery, and deeply umami-driven, bottarga is often compared to truffles, anchovies, and aged cheese for its ability to transform a dish with even a small amount.
Shaved over pasta, seafood, vegetables, eggs, pizza, or warm buttered bread, it brings depth and richness to everyday ingredients. Its most celebrated expression may be Spaghetti alla Bottarga, a dish Anthony Bourdain famously described as “one of the greatest things in life.” Admired and eaten abundantly throughout history.
