"The Water of the Three Tomatoes" is nothing more than tomato water extracted from their passata to make it pulpy. The water is then processed until it's almost transparent. This results in an intense flavor, with a texture completely different from that of tomatoes. This is your secret ingredient instead of vegetable stock or water in a recipe.
The three varietals grown exclusively by them: Romanello , Datterino, and Pera.
The color is bright red. The flavor is sweet with a very light acidic note. It has a fresh tomato aroma and the texture is pulpy, firm and coarse-grained.
