This bar has the aromatic notes of the cocoa Nacional Fino, along with a subtle yet surprising contrast of Sicilian red orange zest. Sabadi uses the Sanguinello orange variety, an age-old variety that grows from late February to April and now forgotten by the mass market, for their "Rossella" chocolate bar. It has a red rind, rich in essential oils and very aromatic, a subtle and perfect contrast in chocolate.
Sabadi's Modica chocolate line is traditionally made according to the age-old cold working process. Throughout the process the temperature never exceeds 45 degrees C/113F. Because of this, all the cocoa’s unique and aromatic notes and the ingredients’ beneficial properties are fully preserved. The unique coarse texture is even more unique and a reminder to how chocolate was once made.
The raw materials used are organic certified and come from fair trade producers and Slow Food presidia with respect for small indigenous communities, the environment and biodiversity.
