This wonderful awase miso is what they called a mixed miso, which is something of a cross between white and red miso.
Nomura-san ages this miso for one and a half years. The flavor is similar to red, but more mellow and less salty, which works perfectly with subtle flavors.
Excellent in a miso soup with eggplant or clams (or any other briny seafood). Keep refrigerated.

The Producer - Horikawaya Nomura is a 300 plus year old soy sauce and miso brewery located in Gobo City, Wakayama Prefecture.
Horikawaya Nomura has always made their soy sauce using traditional techniques. Unlike most other brewers who have changed to cooking with natural gas, Horikawaya Nomura uses wood fires to boil the soybeans, warm the koji room and toast the wheat.
It is with this same care and dedication to traditional methods that Nomura-san produces his amazing miso. Made in small batches at different times of the year, Horikawaya Nomura miso is a very special product with limited availability.
