From my friends at Fatted Calf, this bacon is made from only heritage breed pasture pork raised on small family farms. They dry cure their bacon traditionally, then slowly smoke it over a mix of apple, cherry, alder, and mesquite wood. The result is a flavorful bacon with a sweet, salty, smoky balance that is irresistible!
