This Fatted Calf bacon is made from only heritage breed pasture pork raised on small family farms.  They dry cure their bacon traditionally, then slowly smoke it over a mix of apple, cherry, alder, and mesquite wood.  The result is a flavorful bacon with a sweet, salty, smoky balance that is irresistible!
