Thiercelin's Persian Sapphire blue salt is one of the rarest salts in the world from the salt mine of SEMMAN province in Iran.  This blue salt is distinguished from other salts by its unique taste and sapphire blue color.

It is a strong salt, but not aggressive in the mouth.  Rather subtle and sweet in taste.  To season foie gras, truffle dishes, poultry, fish and shellfish.
